Description
This exemplary 17th century estate is run today by François Servin, along with his Australian brother-in-law, Marc Cameron. Unsurprisingly they manage the estate with a combination of tradition and modernity. They have received much praise – “great elegance, purity and length” wrote critic Andrew Jefford, while Wine Advocate says “these wines deserve to be taken seriously”. Each plot is hand harvested and fermented separately to allow its individuality to shine. One of the larger Premiers Crus in Chablis, Les Vaillons vineyards are south and east-facing and produce intense, ripe, focused wines that will age. Fermented and aged in stainless steel, the wine’s about fruit purity with a fine mineral freshness. Open early and decant, or cellar.
