Fermentation: The grapes are harvested between the end of September and the beginning of October, de-stemmed, crushed and cold-macerated for about 24-48 hours. This is followed by pressing and fermentation of the must at a controlled temperature of 12°-15°C. The definitive cuvée is blended after the first racking. After this, the wine is aged on the lees before being bottled.
