Description
The Serie Folium is named after the latin word “Folium”. Back when the Romans ruled the Mediterranean, latin was the most spoken language of the Pays d’Oc appellation. In this language, the word folium was used to describe the way the colours of the trees change with the passing seasons. Indeed, at the end of summer, the leaves turn pink in the Mediterreanean sun and blow majestically across the sky, carried away by the light breezes of the Pyrenees. The Pays d’Oc region benefits from the Mediterranean climate which provides hot, dry summers for a perfect maturity. On the other side, the Montagne Noire brings enough humidity and cool temperatures for the vineyards to produce grapes packed with rich, fruity notes yet with balanced structure and freshness. The grapes are mechanically harvested during the night, when the temperatures are low in order to keep the grapes fresh and avoid oxidation. As they arrive at the cellar, the grapes are immediately pressed. As they leave the press only the best juices are selected in a CO2 saturated atmosphere to avoid any oxidation of the juices. After a 24h off-settling, the clear juices are drawn from the tanks and left to ferment for 15 days at 13-15°C. Again, the juices are drawn from the tanks to age on their fine lees for 3 months.
