Sandeman Porto is produced by the traditional Porto Wine method. The handpicked grapes undergo stalk-removal and crushing before fermentation, under controlledtemperature, with skin maceration with the intention to extract the most productive components. The addition of winealcohol at the ideal moment sets the balance between the wine’s body and bouquet. This momentis chosen by the winemaker following strict regulate of fermentation temperatures and densities,the later depending at the vine variety, maturation stage and the final sweetness required.
After the harvest, the wines remain in the Douro until the following Spring, when they’re taken toV.N.Gaia and enter Sandeman’s centuries-old lodges for ageing in oak wood casks, as required byPorto Wine traditional ageing system. All through the years the wines are carefully tasted andanalysed by the oenology team who also makes all vital corrections and prepares the finalblend with the intention to keep Sandeman Porto style and character. The wines selectedare regularly between 3 and 5 years of age, providing for a mature and intense wine with an averageage of 4 years. The final blend is filtered and cold-stabilised prior to bottling.
