Their Sixty Barrels Chardonnay uses coastal-cooled grapes, treated to all the Grand Cru methods. Wild yeasts, fermentation in French oak barrels, lees stirring and ageing in cask – all the techniques used for fine Burgundy. This complex wine has a superb balance of bright fruit and subtle oak. A white to savour with salmon en croûte or chicken.
